Vinification
Soft pressing of the grapes with cleaning of the must fermentation at controlled temperature storage of the wine in small stainless steel tanks.
Sparkling process
Addition of sugary syrup and selected yeasts in order to activate refermentation in the bottle bottling proceedings positioning of bottles in stacks in horizontal position re-fermentation of the wine in bottles and maturation on the dregs for at least 24 months pouring off proceedings followed by corking and then the wine is ready for consumption.
In the glass
Sparkling wine with fine and persistent perlage.
Alcohol
13 % vol.
Pressure in the bottle
5,50 atmosfere.
Organoleptic characteristics
Colour: yellow with golden glints.
Aroma: intense, reminiscent of honey made of flower essences.
Flavour: full, delicate, mellow and persistent with reminiscence of candied fruit.
Food
Like champagne excellent as an aperitif and for all dishes, especially with fish. Not suitable for sweets.

To be served at 4-6° Celsius.
